  1. You need 1 lb of italian bulk sausage (we like to use spicy).
  2. You need 1 Tbs of olive oil.
  3. You need 6 cloves of garlic, minced.
  4. You need 2 bags of Misto Alla Griglia eggplants, zucchini, and peppers from the Trader Joe's frozen section.
  5. You need 1/3 cup of pine nuts.
  6. Prepare 4 cups of arugula (1 small bag).
  7. It's 1/2 cup of shave parmesan cheese.

You just cut open the sausage and peel back the plastic. The Lightlife package was a little more difficult to open without slashing. This sausage and vegetable mix is good enough by itself, but add sauerkraut and you have a truly unique and wonderful meal. Put it on a bun and top with sauerkraut for the family, or plate it by itself for a more sophisticated look.

  1. Saute sausage with olive oil and garlic, breaking up the sausage into bite size pieces. In the mean time, microwave the vegetables per the directions on the bag, around 6 minutes per bag..
  2. Once sausage is cooiked, add pine nuts and cook until lightly toasted..
  3. Add arugula and cook until wilted. Turn off heat and stir in parmesan cheese..
  4. Serve as is or over pasta. Enjoy!.
